Surface ripened bloomy cheeses are some of our favorite cheeses to make. Stackhouse is our award winning creation featuring a layer of applewood ash down the center and under the delicate white rind with a light taste of earthy mushroom and fresh milk. Other bloomy varieties include Camille (our camembert type) Mt Pisgah Pyramid, SilverBelle, Midnight Sun, Peppercorn Buche and Oconee Bell.
Last, we have our aged, raw milk cheeses. Our tangy aged Feta is a classic with a mild saltiness and a nice creamy crumble. Bailey Mountain Tomme is a European Alpine type with a natural rind. McChesney is our version of a cloth bound cheddar hand wrapped and rubbed. Liesel is our Swiss type with a hand rubbed spiced chocolate rind. Black Mountain Bleu is our strongest with a creamy kick.
